Sugar-free Protein "Cookies"
2 cups raw almonds
2 cups raw pecans
1 cup shredded unsweetened coconut
3 scoops vanilla protein powder
2 tablespoons melted coconut oil
8 medjool dates, pits removed
1 teaspoon vanilla
2 teaspoons cinnamon
3/4 teaspoon sea salt
Mix all ingredients in a powerful blender. Place in mini-muffin tins and press down firmly. Place them in refrigerator to set and enjoy! Store those you don't eat right away in the refrigerator.
They taste really good, my kids like them, and there is no sugar, no gluten, or other processed ingredients. (The whole 30 doesn't recommend using whey or protein powder during the 30 days, but as a nutritional therapist, I am allowing myself protein powder because of it's detoxifying properties. (The brand I use is Biotics, using whey from grass fed cows, low temperature processed and sweetened with stevia.)
