Shrimp and Lemon Green Salsa

Overview

Jumbo shrimp cooked (I used frozen and thawed it)

½ fresh lemon

1 clove garlic, finely chopped

1 shallot, finely chopped

¼ cup olive oil

¾ cup flat leaf parsley, finely chopped

½ cup cilantro, finely chopped

salt and pepper to taste

Heat olive oil, garlic, and shallot in a small pan over medium heat for 1-2 minutes until garlic is brown. Cool this while you finely chop the lemon including the rind (discard the seeds). Add the lemon, herbs, salt and pepper to the olive oil mixture. Mix well and serve over the shrimp.

Why I like this: It is so fast, less than 10 minutes and tastes amazingly fresh, because it is! The lemon provides a full day of vitamin C. The herbs provide antioxidants and help to detoxify your body. The olive oil is a healthy fat. The salsa also tastes great with other meats. Enjoy!
