Mixed Berry Flax Pancake
2 tablespoons ground flaxseed
1 tablespoon water
2 eggs
2 tablespoons grated carrot
¼ cup mixed berries
1 dash sea salt
1 tablespoon grass fed butter
1/8 teaspoon almond extract (optional)
1 packet stevia (not during the “whole 30”)

Mix all ingredients (except butter) together in a bowl. Use a medium sauté pan and melt the butter over medium heat. Add the pancake mixture ( you can make one large pancake or smaller ones) and cook for about 2 minutes until the pancake is firm enough to flip. I slide it onto a plate then flip it off the plate into the pan. Cook for another 2 minutes. Sprinkle with cinnamon and serve with a few more berries and maple syrup if not on the “whole 30.”
