Mixed Berry Flax Pancake

Mixed Berry Flax Pancake
2 tablespoons ground flaxseed
1 tablespoon water
2 eggs
2 tablespoons grated carrot
¼ cup mixed berries
1 dash sea salt
1 tablespoon grass fed butter
1/8 teaspoon almond extract (optional)
1 packet stevia (not during the “whole 30”)

Mix all ingredients (except butter) together in a bowl. Use a medium sauté pan and melt the butter over medium heat. Add the pancake mixture ( you can make one large pancake or smaller ones) and cook for about 2 minutes until the pancake is firm enough to flip. I slide it onto a plate then flip it off the plate into the pan. Cook for another 2 minutes. Sprinkle with cinnamon and serve with a few more berries and maple syrup if not on the “whole 30.”

“Flaxseed contains both soluble and insoluble fiber as well as lignans, estrogen modulating substances that have antiviral, antibacterial and antifungal properties. Because of their effect on estrogen, flaxseeds are especially helpful for women suffering from PMS, premenopausal and menopausal challenges.” The Fast Track Detox Diet, Ann Louise Gittleman, Ph.D., C.N.S.
