Granola (Gluten free and sugar free)
2 cups raw almonds (ideally soaked 8 hours*)
1 cup raw pumpkin seeds (ideally soaked 6 hours*)
1 cup raw sunflower seeds (ideally soaked 2 hours*)
1 tablespoon cinnamon
1 teaspoon sea salt
Process or chop the almonds to granola size and texture. Mix in seeds, cinnamon, and salt. Grate the apples with a cheese grater over the granola, allowing the juice to sweeten the mixture. Dehydrate in the oven at 150 degrees (or lowest temperature) for 13 hours (3 hours if not soaking nuts and seeds). Cool and store in an airtight container.
*To soak or sprout nuts and seeds cover nuts with distilled water and add 3/4 teaspoon sea salt per cup of nuts/seeds. Allow them to soak at room temperature for the times listed above.
This there is no sugar or gluten and it is easy to make. It is so hard to find a store bought granola without sugar in it. It is also a great source of protein, fat and fiber. Soaking or sprouting the seeds increases the nutrient profile and makes them more easily digested. You can experiment with flavors, adding dried cherries, raisins, coconut or other nuts.
