Curry Chicken Salad
3-4 cups diced chicken, cooked
1/3 cup mayonnaise (homemade recipe see March 5th entry)
2 teaspoons curry powder
1 grated carrot
1/4 cup currants
1/4 cup cashew, chopped
1 green onion, sliced
2 stalks celery, chopped
salt and pepper to taste
fresh greens for serving

Mix all ingredients together and serve with greens.
