Chicken Avocado Salad
2 cups chicken
2 medium avocados, diced
1 tablespoon plus 1 tablespoon lime juice
sea salt to taste
1/2 cup chopped cilantro
2 tablespoons mayonnaise (see March 5th post for homemade recipe)
1 large bell pepper
green onions (optional)

Mix 1 tablespoon lime juice with mayonnaise in a small bowl. Toss the avocados with the other tablespoon lime juice. Carefully mix the ingredients together and serve inside the bell pepper. Recipe inspired by http://www.kalynskitchen.com/…/recipe-for-chicken-and-avoca…

It was fast, a good balance of protein and healthy fat from the avocado and mayonnaise, which will help to balance your blood sugars and keep you full longer.
