1 cup coconut oil, softened
1 1/4 cup shredded coconut unsweetened, unsulfured
1 1/4 cup almond flour
6 tablespoons pure organic maple syrup
1 tsp sea salt
1 tsp pure vanilla
1.2 oz freeze dried strawberries, unsweetened and unsulfured
Combine all the ingredients into a large mixing bowl. Thoroughly mix all the ingredients making sure to break up the strawberries. Using about a tablespoon form dough form the dough into bite-sized balls. When all the macaroons have been made, put them in the refrigerator to harden.
Why I like this: It is gluten free and refined sugar free! This treat is always a hit where ever I bring it. The ingredients include healthy fat from the almond meal and coconut, making it a guiltless treat, in moderation of course. As a bonus, coconut oil has CLA which has been suggested to assist in fat loss and lean tissue preservation.
