2 tablespoons coconut oil. softened
2 tablespoons coconut flour
2 tablespoons maple syrup
1 tablespoon coconut or almond milk
¼ teaspoon baking powder
¼ teaspoon vanilla
Cake directions: Mix all ingredients together and place in a microwave safe mug or bowl. Microwave on high for 2 minutes. Or heat oven to 350 degrees and bake cake for 15-25 minutes.
2 tablespoons coconut cream or milk (from the can)
2 teaspoons honey
1 teaspoon butter
1 pinch of sea salt
½ teaspoon vanilla
2 tablespoons unsweetened shredded coconut
Heat all ingredients in a small saucepan over medium heat until frosting turns a light caramel color, about 5 minutes. Pour frosting over cake and broil for 1 minute. Let cake cool and enjoy!
Lazy Daisy cake is a traditional birthday cake in our home. This year for my baby’s 11th birthday I recreated the favorite to be gluten/grain free, dairy free, and free of processed sugar! It was bowl licking good!
Why I like this: it’s a really quick treat without guilt! The coconut oil, coconut flakes and flour have CLA in them an fatty acid that helps burn fat and retain muscle. Coconut is also a very health fat in general. I normally don’t use the microwave, but for this quick sweet treat I do.
