1 pound ground pork or other meat
1 tablespoon bacon grease or butter
1 onion, sliced
1 green onion, sliced
1 diced tomato
3/4 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon fennel seeds
1/4 teaspoon each oregano, thyme and basil (or 3/4 teaspoon Italian spice)
1/4 teaspoon garlic
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
In a medium pan over medium heat, sauté the bacon grease, meat and spices. Stirling occasionally and breaking up the meat until it is cooked through. Remove meat from the pan and sauté the onions and peppers until soft. Add the tomato, meat and reheat. Serve and enjoy!
