Coconut Choco Cookies

Overview

Ingredients:

2 1/2 cups shredded unsweetened coconut

1/2 cup coconut oil

1/4 cup coconut palm sugar

1 tablespoon vanilla

1/4 teaspoon salt

1/2 cup chopped walnuts

1/2 cup dairy, soy free chocolate chips (I like enjoy life brand)

2 eggs

Directions:

Preheat oven to 350 degrees. Line a jelly roll pan (rimmed cookie sheet) with parchment paper. Mix all ingredients together and place 1 tablspoon size dollaps onto parchment paper. Flatten the cookies slightly. Bake for 15-18 minutes, until golden brown. Store left over cookies in freezer and eat frozen or room temperature.
