Chicken Quinoa Curry Salad

8 ounces cooked chicken breast diced

1 cup cooked quinoa

½ teaspoon ground cumin

2-4 tablespoons chopped walnuts (or other nut)

1 cup green and red grapes cut in half

½ cup fresh basil leaves cut into strips

fresh greens

Dressing Ingredients

¼ cup fresh squeezed grapefruit juice

1-2 tablespoons fresh lemon juice

¼ cup fresh lime juice

1 teaspoon curry powder or

½ teaspoon turmeric (optional)

¼ cup olive oil

Directions

Mix the dressing ingredients together and stir or shake well. Mix the salad ingredients together and add the dressing.

Why I like this: It’s a perfect summer salad that can be made ahead of time for dinner or lunch. It combines healthy fat, protein, and carbohydrate to provide a meal that keeps hunger at bay. If you use turmeric, you get an added bonus, as it is known for it’s anti-inflammatory properties.
